Chicken In White Wine And Tarragon
|Chicken||3 Pound, quartered, skinned, all visible fat removed (1 Whole)|
|Dry white wine||1 Cup (16 tbs)|
|Black pepper||To Taste|
Preheat oven to 350° F.
Rinse chicken and pat dry.
Arrange chicken in a shallow pan and pour wine over it.
Sprinkle with tarragon and pepper.
Cover with foil and bake 45 minutes.
Remove foil and turn oven setting to broil.
Place chicken under broiler, 5 inches from heat, 2 to 3 minutes, or until it is lightly browned.
