Cherries In Red Wine

Ingredients
  Burgundy/Other dry red wine 1 1⁄2 Cup (24 tbs)
  Sugar 1⁄3 Cup (5.33 tbs)
  Minced peeled ginger root 1 Tablespoon
  Cinnamon stick 3 Inch
  Black peppercorns 10
  Lemon rind strips 6 (2- X 1/4-Inch)
  Frozen unsweetened sweet cherries 32 Ounce (2 Packages, 16 Ounces Each)
Directions

Combine first 6 ingredients in a large saucepan.
Bring to a boil.
Add cherries; cover, reduce heat, and simmer 5 minutes or until cherries are tender.
Transfer cherries to a bowl, using a slotted spoon.
Return wine mixture to a boil; cook over medium-high heat 15 minutes, stirring frequently.
Remove from heat; strain through a fine sieve.
Pour mixture over cherries.
Cover and refrigerate at least 4 hours.
