Cherries In Red Wine
|Burgundy/Other dry red wine||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Minced peeled ginger root||1 Tablespoon|
|Cinnamon stick||3 Inch|
|Lemon rind strips||6 (2- X 1/4-Inch)|
|Frozen unsweetened sweet cherries||32 Ounce (2 Packages, 16 Ounces Each)|
Combine first 6 ingredients in a large saucepan.
Bring to a boil.
Add cherries; cover, reduce heat, and simmer 5 minutes or until cherries are tender.
Transfer cherries to a bowl, using a slotted spoon.
Return wine mixture to a boil; cook over medium-high heat 15 minutes, stirring frequently.
Remove from heat; strain through a fine sieve.
Pour mixture over cherries.
Cover and refrigerate at least 4 hours.
