Garlic Wine Steamed Mussels

Ingredients
  Olive oil 2 Teaspoon
  Minced shallots 1⁄2 Cup (8 tbs)
  Garlic 3 Clove (15 gm), minced
  Dry white wine 3⁄4 Cup (12 tbs)
  Chopped fresh thyme 2 Teaspoon
  Fresh lemon juice 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Bay leaf 1
  Mussels 12 Ounce, scrubbed and debearded (24 Pieces)
  Tomato 1 , peeled, seeded and chopped
  French bread slices 2 (1 Inch Thick)
Directions

1. Heat oil in a large nonstick skillet over medium-high heat. Add shallots and garlic; saute 3 minutes. Add wine, thyme, lemon juice, salt, and bay leaf; bring to a boil. Reduce heat, and simmer 10 minutes. Return to a boil; add mussels and tomato. Cover and cook 5 minutes or until
shells open. Discard any unopened shells.
