Pears Poached In Sweet White Wine
|Sweet white wine/Sauternes||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Lemon rind||1 , juiced|
|Whipping cream||1 Cup (16 tbs)|
|Pear brandy||1 Tablespoon|
1 In a pan, combine wine, water and sugar.
2 Add rind and juice of 1 lemon.
3 Simmer for 5 minutes.
4 Meanwhile, peel and core the pears and immediately add them into the syrup.
5 Simmer pears for 10-15 minutes depending on ripeness.
6 Remove the pears from the syrup and transfer to a dish.
7 Boil the syrup over high heat until reduced to half of its quantity.
8 In individual serving dishes, arrange the poached pears.
9 Pour syrup over them and serve at once.
