Baked Buckwheat Pudding
|Eggs||2 , beaten|
|Buckwheat groats||1⁄2 Cup (8 tbs)|
|Milk||6 Cup (96 tbs)|
|Molasses||3⁄4 Cup (12 tbs)|
|Ground ginger||1 1⁄2 Teaspoon|
Combine eggs and groats.
Scald 2 cups milk in medium-size frying pan.
Stir in groats, cover, and cook over low heat for 10 minutes, stirring occasionally.
Blend in 2 cups milk and remaining ingredients.
Pour into 1 1/2 -quart baking dish.
Bake, uncovered, in preheated slow oven (325°F.) for about 1 hour.
Stir in remaining milk; continue to bake for 1/4 hours.
Serve warm with cream or ice cream.
Makes 6 servings.
