Buckwheat Face Pancakes

Get the kids to whip up these hearty buckwheat pancakes - with just a little help from a grown-up! Make "faces" out of fruit for a fun-filled breakfast.
Ingredients
  Buckwheat flakes 1⁄2 Cup (8 tbs)
  Whole wheat pastry flour 1⁄2 Cup (8 tbs)
  Baking powder 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Flax meal 1 Tablespoon
  Warm water 3 Tablespoon
  Non dairy milk 3⁄4 Cup (12 tbs)
  Agave nectar 1 Tablespoon
  Oil 2 Tablespoon
  Lemon juice 1⁄2 Teaspoon
  Oil 1 Tablespoon (For greasing)
For the decoration
  Strawberries 6
  Blueberries 1⁄2 Cup (8 tbs)
  Orange 1 , sliced
Directions

MAKING
1. Put all of the dry ingredients in a bowl and mix. Add the wet ingredients and mix with a whisk.
2. Warm a non-stick pan over medium heat and add a little oil. Pour 1/4 - 1/2 cup of batter into the pan. When bubbles have formed on top and around the edges and the underside is golden brown, flip and cook for another minute or two.

FINALIZING
3. Decorate with blueberry "eyes," a strawberry "nose," and an orange "mouth."

SERVING
4. Top with maple syrup and serve hot.
