Whole Wheat Crumpets
|Milk||1⁄2 Cup (8 tbs)|
|Boiling water||1⁄2 Cup (8 tbs)|
|Cake yeast||1 5⁄8 Ounce|
|Sifted whole wheat pastry flour||1 3⁄4 Cup (28 tbs)|
|Baking powder||2 Teaspoon|
|Hot tap water||3 Tablespoon|
|Raisins/Chopped apples||1⁄2 Cup (8 tbs)|
|Canned tuna fish||24 Ounce, tops and bottom removed and washed well (4 Or More Cans)|
Mix milk and boiling water together in a large mixing bowl.
Cool to lukewarm (90°).
Stir in yeast and honey and let stand in warm place for 10 minutes.
Stir in salt and flour.
Mix well, cover with a towel, and let rise in a warm place (84° - 86°) until very bubbly and almost doubled in bulk (about 30 to 40 minutes).
Mix baking powder with the hot tap water.
Stir into batter and let rise again, covered, in a warm place until doubled in bulk (about 30 minutes).
Heat a lightly greased griddle or very large skillet until a drop of water jumps when sprinkled on it.
Place as many lightly greased tuna fish can rings on the griddle as you have and spread small amount of batter evenly into the bottom of them.
Cook slowly until brown on bottom and dry on top.
Turn and let brown quickly on the other side.
Repeat until all batter is used up.
