Watermelon Relish Mold
|Lemon gelatin||3 Ounce (1 Package)|
|Boiling water||3⁄4 Cup (12 tbs)|
|Ginger ale||1 Cup (16 tbs)|
|Chopped sweet pickled watermelon rind||1⁄2 Cup (8 tbs)|
|Thawed frozen whipped topping||1⁄2 Cup (8 tbs)|
|Mayonnaise/Salad dressing||1⁄4 Cup (4 tbs)|
|Chopped capers||2 Tablespoon|
Mix gelatin and salt in a bowl.
Add boiling water and stir until dissolved.
Mix in ginger ale.
Chill until gelatin is slightly thickened.
Blend the watermelon rind and a mixture of the remaining ingredients into the thickened gelatin.Turn mixture into a 3-cup mold.
Chill until firm.
