Minted Watermelon Balls
|Sugar||1 Cup (16 tbs)|
|Mint leaves||1⁄4 Cup (4 tbs)|
|Lemon juice||4 Tablespoon|
|Watermelon balls||6 Cup (96 tbs)|
Combine sugar, mint leaves and 2 cups water in small saucepan; bring to a boil, stirring until sugar is dissolved.
Reduce heat; simmer for 5 minutes.
Strain syrup; stir in lemon juice.
Cool; chill well.
Arrange watermelon balls in chilled sherbet glasses; add mint syrup.
Chill until ready to serve.
