Walnut Oat Crisps
|Butter/Margarine||1⁄2 Cup (8 tbs), softened|
|Packed brown sugar||1 Cup (16 tbs)|
|Grated orange peel||1 1⁄2 Teaspoon|
|Whole wheat flour||2⁄3 Cup (10.67 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon|
|Rolled oats||1 1⁄3 Cup (21.33 tbs), uncooked|
|Diamond walnuts||1 1⁄4 Cup (20 tbs), chopped|
|Granulated sugar||1⁄2 Cup (8 tbs) (For Flattening Cookies)|
In medium bowl, cream butter, brown sugar, egg and orange peel.
In small bowl, combine whole wheat flour, soda, salt and cinnamon; blend into creamed mixture.
Stir in oats and 3/4 cup of the walnuts.
Shape into 1-inch balls, and place on lightly greased baking sheets.
Dip bottom of glass into granulated sugar and flatten cookies; sprinkle with remaining 1/2 cup walnuts.
Bake in preheated 350Â°F oven about 10 minutes or until lightly browned.
Cool slightly on baking sheet, then remove to wire racks to cool completely before storing.
