Microwave Walnut Brittle
|Chopped walnuts/Black walnuts||2 Cup (32 tbs)|
|Sugar||1 Cup (16 tbs)|
|Light corn syrup||1⁄2 Cup (8 tbs)|
|Butter||1 Tablespoon (No Substitutes)|
|Vanilla extract||1 Teaspoon|
|Baking soda||1 Teaspoon|
In a covered 1-1/2-qt microwave-safe glass dish, microwave the walnuts, sugar, corn syrup and salt on high for 4 minutes.
Stir; cook 4 minutes longer.
Stir in butter and vanilla.
Cover and microwave on high for 2 minutes.
Add baking soda; stir quickly until light and foamy.
Immediately drop by spoon onto a lightly buttered baking sheet.
Store in an airtight container at room temperature.
