Endive Lettuce With Walnut Gorgonzola Dressing

Ingredients
  Endive 6 , cut into julienne strips
  Walnut oil 1⁄2 Cup (8 tbs)
  White wine vinegar 1⁄4 Cup (4 tbs)
  Lemon juice 1 Tablespoon (Juice Of 1 Lemon)
  Dijon mustard 1 Tablespoon
  Crumbled gorgonzola cheese 1 Cup (16 tbs)
  Granny smith apple 1 Cup (16 tbs), cubed
  Chopped walnuts 1⁄2 Cup (8 tbs)
  Chopped italian parsley 1⁄2 Cup (8 tbs)
Directions

Wash the lettuce thoroughly and pat dry.
Place the lettuce in a salad bowl and keep chilled until you are ready to serve.
Whisk together the oil, vinegar, lemon juice, and mustard.
Pour over the lettuce and mix gently.
Place on chilled plates and sprinkle with the cheese, apples, walnuts, and parsley.
Toast some great bread and enjoy!
