Classic Chocolate Waffles

Ingredients
  Cake flour 2 1⁄2 Cup (40 tbs), sifted
  Baking powder 4 Teaspoon
  Salt 1⁄2 Teaspoon
  Sugar 1⁄2 Cup (8 tbs)
  Cocoa 1⁄4 Cup (4 tbs)
  Eggs 2 , separated
  Milk 1 1⁄2 Cup (24 tbs)
  Vanilla 1⁄2 Teaspoon
  Butter/Margarine / shortening 1⁄3 Cup (5.33 tbs), melted
Directions

1. Heat the waffle iron.
2. Sift all the dry ingredients together.
3. Beat the egg yolks thoroughly and combine with the milk and vanilla. Add to the dry ingredients and beat until smooth. Add the cooled butter, margarine or shortening.
4. Beat the egg whites stiff but not dry and fold into the mixture.
5. Pour the batter into the hot iron, filling each compartment two-thirds full (about 1 tablespoon of batter in each will do this). Cover and bake 3 to 5 minutes, until golden brown on both sides.
