Easy Potato Waffles

Ingredients
  Eggs 3
  Sifted all purpose flour 1 Cup (16 tbs)
  Baking powder 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Milk 1 Cup (16 tbs)
  Melted shortening 1 Tablespoon
  Diced cooked potatoes 2 Cup (32 tbs)
  Butter 2 Tablespoon
  Maple syrup 2 Tablespoon
Directions

Beat eggs until light.
Add sifted dry ingredients, milk, and shortening; mix until smooth.
Add potatoes and mix well.
Bake in hot waffle iron.
Serve hot with butter and syrup.
