Special Day Waffles
|Regular all purpose flour||2 Cup (32 tbs)|
|Double-acting baking powder||3 Teaspoon|
|Baking soda||1 Teaspoon|
|Buttermilk||2 Cup (32 tbs)|
|Eggs||4 , well beaten|
|Butter/Margarine / salad oil||1 Cup (16 tbs), melted|
Preheat waffle iron as manufacturer directs.
Sift flour, baking powder, soda, salt.
Combine buttermilk, eggs; add to flour mixture.
With hand beater, or mixer at high speed, beat until smooth; stir in butter.
When waffle iron is ready, pour batter into center until it spreads to about 1" from edges.
Bring cover down gently.
Cook as manufacturer directs.
Do not raise cover during baking.
When waffle is done, lift-cover; loosen waffle with fork; serve at once.
Reheat iron before pouring in next waffle.
