Delicious Cornmeal Waffles

Ingredients
  Eggs 2 , separated
  Buttermilk 2 Cup (32 tbs)
  Whole wheat flour/Unbleached white flour 1 Cup (16 tbs)
  Cornmeal 3⁄4 Cup (12 tbs)
  Baking powder 2 Teaspoon
  Soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Sugar 2 Tablespoon
  Wheat germ 1⁄4 Cup (4 tbs)
  Butter/Margarine 6 Tablespoon, melted and cooled
Directions

In a medium-size bowl, beat egg yolks and buttermilk until blended.
In another medium-size bowl, stir together flour, cornmeal, baking powder, soda, salt, sugar, and wheat germ.
Gradually add flour mixture to yolk mixture; blending until smooth.
Stir in butter.
In a small bowl, beat egg whites just until stiff, moist peaks form; fold into cornmeal batter just until blended.
Bake waffles in a preheated waffle iron according to manufacturer's directions.
Serve hot.
