Corn Meal Waffles

Ingredients
  Sifted flour 1 3⁄4 Cup (28 tbs)
  Yellow corn meal 1 Cup (16 tbs)
  Baking powder 2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Sugar 3 Tablespoon
  Salt 1 Teaspoon
  Eggs 2
  Buttermilk 2 1⁄2 Cup (40 tbs)
  Melted butter/Margarine / shortening 1⁄3 Cup (5.33 tbs)
Directions

1. Heat the waffle iron.
2. Sift the dry ingredients together.
3. Beat the egg yolks well and combine with the buttermilk; add to the corn meal mixture, beating until smooth. Stir in the cooled butter, margarine or shortening.
4. Beat the egg whites stiff but not dry and fold in the mixture.
5. Pour the batter into the hot iron, filling each compartment two-thirds full (about 1 tablespoon of batter in each will do this). Cover and bake 3 to 5 minutes, until golden brown on both sides.
