|Flour||2 Cup (32 tbs), sifted|
|Baking powder||3 Teaspoon|
|Eggs||3 , separated|
|Milk||1 1⁄4 Cup (20 tbs)|
|Butter/Margarine, or shortening||1⁄4 Cup (4 tbs), melted|
1. Heat the waffle iron.
2. Sift the flour with the baking powder and salt.
3. Combine the well-beaten egg yolks and the milk and add to the dry ingredients, beating until the mixture is smooth; add the cooled butter, margarine or shortening.
4. Beat the egg whites stiff enough to stand in peaks but not dry and fold into the mixture.
5. Pour the batter in the iron, filling each compartment two-thirds full (about 1 tablespoon of batter in each will do this). Cover. Cook 3 to 5 minutes. They should be light golden brown on both sides.
