Brown Buttermilk Waffles
|Cornmeal||1 Cup (16 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
|Eggs||2 , separated|
|Flour||1 Cup (16 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Buttermilk||1⁄2 Cup (8 tbs)|
Mix the cornmeal, water, salt and shortening in a saucepan and cook for 10 minutes, stirring constantly.
Beat the egg yolks until light and stir into cornmeal mush.
Sift the flour and soda together and add to mush alternately with the milk.
Stir in the buttermilk and fold in stiffly beaten egg whites.
Bake in a hot waffle iron until brown.
