Light 'N' Crispy Buttermilk Waffles

Ingredients
  Regular all-purpose flour 1 Cup (16 tbs), unsifted
  Yellow cornmeal 1⁄2 Cup (8 tbs)
  Rolled oats 1 Cup (16 tbs)
  Baking powder 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Eggs 2
  Melted bacon drippings/Other shortening 1⁄2 Cup (8 tbs), cooled
  Buttermilk 3 Cup (48 tbs)
Directions

Put all dry ingredients into a bowl, break in the eggs, add the bacon drippings, and stir in the buttermilk.
Let the batter stand about 15 to 30 minutes, until it almost doubles in quantity (because of the large amount of baking powder).
Bake waffles in a waffle iron according to manufacturer's instructions.
