Light 'N' Crispy Buttermilk Waffles
|Regular all-purpose flour||1 Cup (16 tbs), unsifted|
|Yellow cornmeal||1⁄2 Cup (8 tbs)|
|Rolled oats||1 Cup (16 tbs)|
|Baking powder||2 Tablespoon|
|Melted bacon drippings/Other shortening||1⁄2 Cup (8 tbs), cooled|
|Buttermilk||3 Cup (48 tbs)|
Put all dry ingredients into a bowl, break in the eggs, add the bacon drippings, and stir in the buttermilk.
Let the batter stand about 15 to 30 minutes, until it almost doubles in quantity (because of the large amount of baking powder).
Bake waffles in a waffle iron according to manufacturer's instructions.
