|Toasted walnuts||1⁄4 Cup (4 tbs), finely chopped|
1. In a large bowl, beat butter with an electric mixer on medium speed until creamy. Add brown sugar and vanilla. Continue to beat until light and fluffy. In a small bowl, stir together flour and baking powder. Gradually blend into butter-sugar mixture. Stir in 1/2 cup walnuts. Shape mixture into an 8-inch log. Roll log in remaining walnuts to coat. Wrap in wax paper and refrigerate 1 hour or freeze until firm.
2. Preheat oven to 350°F. Using a sharp knife, cut dough into 1/4-inch-thick slices. Place about 1 inch apart on ungreased baking sheets. Bake 10 to 12 minutes, until lightly browned. Using a wide spatula, remove to a rack to cool.
