Nilly Vanilla Wafers
|Soft butter||6 Tablespoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Egg||1⁄2 , beaten (whisk egg lightly in bowl, divide contents in half, use only half)|
|Vanilla extract||1⁄4 Teaspoon|
|Cream of tartar||1⁄8 Teaspoon|
1. Heat oven to 350°. In a mixer on low speed, or by hand with a wooden spoon, cream together the soft butter and sugar. Gradually work in the egg and vanilla.
2. In a separate bowl, whisk or sift together the flour, cornstarch, and cream of tartar. Add the flour mixture to the butter mixture in two additions, mixing only enough to combine.
3. Roll the dough into teaspoon-sized balls, and line up on an ungreased baking sheet. Bake 15 minutes, or until the edges are slightly brown. Cool before removing from sheet with a spatula.
