|Lemon peel||1 Tablespoon, grated|
|Lemon extract||1⁄4 Teaspoon|
|Ginger||1⁄8 Teaspoon, ground|
|All purpose flour||1 Cup (16 tbs)|
|Pecans||1 Cup (16 tbs), chopped|
|Powdered sugar||1 Tablespoon|
Cream butter and sugar until fluffy.
Add lemon peel, lemon extract, and ginger.
Add flour and mix well.
Stir In nuts.
Shape dough into balls the size of small walnuts.
Place 2 inches apart on ungreased cookie sheets.
Bake at 325° for 15 to 17 minutes, or until cookies just begin to brown.
While cookies are still warm, roll in powdered sugar
