Truite Au Bleu

Ingredients
  Water 3 Cup (48 tbs)
  Vinegar 1 Cup (16 tbs)
  Peppercorns 6
  Bay leaf 1 Small
  Salt 1 Teaspoon
  Dressed trout 4
  Melted butter 1 Tablespoon
  Boiled potatoes 1 Cup (16 tbs) (Hot)
Directions

Bring first 5 ingredients to a boil.
Drop in trout and simmer just long enough to cook fish through, about 4 minutes for the average fish.
Serve hot with melted butter and boiled potatoes, and asparagus, if desired.
Makes 4 servings.
