Spiced Vinegar

Ingredients
  Cider vinegar 8 Cup (128 tbs)
  Sugar 1 Cup (16 tbs)
  Garlic pods 2
  Whole cloves 1 Tablespoon
  Whole allspice 1 Tablespoon
  Whole mace 1 Teaspoon
  Celery seeds 1 Tablespoon
  Mustard seeds 1 Tablespoon
  Whole peppercorns 1 Tablespoon
  Turmeric 1 Tablespoon
  Chopped ginger root 1 Tablespoon
Directions

1. Place the vinegar, sugar, garlic, cloves, allspice, mace, celery and mustard seeds, pepper, turmeric and ginger root in a large enamel saucepan. Bring slowly to boiling. Let cool.
2. Pour into sterile, hot jars or bottles, cover and let stand 3 weeks.
3. Strain and use.
