Mussels Vinaigrette

Ingredients
  Mussels 36
  Water 1⁄2 Cup (8 tbs)
  Green pepper 1 Small, minced
  Sweet red pepper 1⁄2 Small, minced
  Red onion 1 , minced
  Oil 1⁄2 Cup (8 tbs)
  Vinegar 6 Tablespoon
  Salt 1⁄8 Teaspoon
Directions

Scrub mussel shells; place in saucepan with water.
Bring to a boil.
Cover cook for 6 to 8 minutes, or until shells open; remove top shell.
Discard; combine remaining ingredients; serve on mussels
