Asparagus Vinaigrette Mimosa

Ingredients
  Asparagus 1 Pound
  Water 1⁄4 Cup (4 tbs)
  Egg 1
  Vegetable oil 1⁄3 Cup (5.33 tbs)
  White wine vinegar 2 Tablespoon
  Dijon mustard 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Parsley 2 Tablespoon, freshly chopped
Directions

MAKING
1) Peel the stems and snap off the ends of the asparagus
2) Onto a platter, arrange the asparagus with the tip towards the center
3) Sprinkle water
4) Cling wrap the dish and microwave for 4minutes till tender
5) Allow to rest, drain off water and let to cool
6) Into 2 custard cups, separate the yolk and white
7) Using a toothpick, pierce the yolk
8) Cling wrap and microwave for 1 1./2minute till firm
9) Using a whisk, blend together oil, vinegar, mustard and salt
10) Pour over the asparagus
11) Pass the yolk through the sieve and in a ring pour over the asparagus
12) Similarly with the egg white, pass through the sieve over the asparagus
13) Finish off with chopped parsley

SERVING
14) Serve immediately
