Grouper with Coriander Vinaigrette

Ingredients
  Grouper fillets 3
  White wine vinegar 2 Tablespoon
  Olive oil 2 Teaspoon
  Ground coriander 1⁄2 Teaspoon
  Paprika 1⁄4 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Vegetable cooking spray 1
  Carrots 1 Cup (16 tbs), shredded
  Green pepper 1⁄4 Cup (4 tbs), finely chopped
Directions

GETTING READY
1) Preheat the oven to 350F. Place the fish in a 12X8X2 -inch baking dish.
2) Under cold, running water, wash the grouper fillets. Pat them dry.

MAKING
3) In a bowl, mix vinegar, olive oil, coriander, paprika and garlic. Mix well.
4) Brush the fillets with the vinegar mixture.
5) Bake without cover for 3 minutes till the fish starts to flake. Keep basting the fish with the vinegar mixture throughout the bake time.
6) Transfer the fish to a warm serving platter.
7) Spray a small skillet with cooking spray. Heat it over medium flame.
8) Add in carrots, green pepper and saute till they soften.

SERVING
9) Arrange the sauted vegetables over the fillets.
10) Serve hot.
