Vinaigrette Dressing

Ingredients
  Olive oil/Salad oil 1 Cup (16 tbs)
  Red wine vinegar 1⁄3 Cup (5.33 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Capers 2 Tablespoon, finely chopped
  Chives 2 Tablespoon, finely chopped
Directions

MAKING
1.In a jar with tight-fitting lid, combine all the ingredients. Shake vigorously so as to mix in all the flavours.
2. Refrigerate dressing and use as required. Makes 1 1/3 cups.

SERVING
3. Drizzle on garden fresh greens or serve with a salad of your choice.

TIPS
Always shake the prepared dressing just before use, reason being that all the heavy ingredients tend to settle to the bottom of the jar. Makes 1/2 heaps.
