|Dijon mustard||1⁄4 Cup (4 tbs)|
|Red wine vinegar||1⁄4 Cup (4 tbs)|
|Freshly ground pepper||1⁄4 Teaspoon|
|Mild olive oil||1⁄2 Cup (8 tbs)|
In a small bowl, stir together the mustard, vinegar and pepper.
Whisk in the oil in a thin stream until incorporated.
(The dressing can be made up to 1 week ahead and refrigerated in a sealed jar.)
