Chilled Asparagus Vinaigrette

Ingredients
  Asparagus spears 1 Pound
  Water 1⁄4 Cup (4 tbs)
  Cooking liquid 1⁄4 Cup (4 tbs) (From Asparagus Spears With Water To Make 1/2 Cup Liquid)
  Cider vinegar 1⁄4 Cup (4 tbs)
  Parsley 2 Teaspoon
  Chives 2 Teaspoon
  Pimiento 2 Teaspoon
  Capers 2 Teaspoon
  Salt 1 Teaspoon
  Dry mustard 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

GETTING READY
1. Cut off or snap off the lower part of spears.
2. If desired, peel spears with vegetable peeler.

MAKING
3. In a rectangular baking dish, place spears alternating the direction of half the spears.
4. Add 1/4 cup water.
5. Cover dish with plastic wrap.
6. Cook on High for 4 minutes.
7. Rearrange spears by moving the inside ones to the outside of dish.
8. Cook on High for 3 minutes.
9. Drain spears but reserve liquid for sauce.

FINALISING
10. In a screw-top jar put all the ingredients.
11. Cover jar tightly.
12. Shake well to blend.
13. Pour sauce over asparagus spears.
14. Place in refrigerator to marinate 12 hours or overnight.

SERVING
15. Drain off liquid, reserving the parsley, chives, capers and pimientos as garnish.
