Lily Lime Vinaigrette
|Fresh lime juice||1⁄3 Cup (5.33 tbs)|
|Dijon mustard||1 Tablespoon|
|Freshly ground black pepper||To Taste|
|Olive oil||1⁄2 Cup (8 tbs)|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Minced shallots||1 Tablespoon|
|Finely grated lime zest||1|
|Snipped fresh chives||3 Tablespoon|
1) In a small bowl, whisk the lime juice, mustard, salt and pepper together.
2) Gradually drizzle in the oils and whisk continuously, until thickened.
3) Then stir in the shallots and lime zest, blend well.
4) Before 15 minutes to use, stir in the chives.
5) Use as required.
