Artichoke Vinaigrette

Ingredients
  White balsamic vinegar 3 Tablespoon
  Olive oil 1⁄2 Cup (8 tbs)
  Lemon 1⁄2 Medium, juiced
  Artichoke hearts 3 Large
  Dijon mustard 1 Teaspoon
Directions

MAKING
1. In a food processor, place together oil, vinegar and artichokes.
2. Add in the freshly squeezed lemon juice and Dijon mustard.
3. Process the vinegar mixture for about 30 seconds to 1 minute or until the smooth.

SERVING
4. Serve the Artichoke Vinaigrette dressing with grilled salmon or blanched vegetables as desired.
