Little Joe's Vinaigrette
|Celery||1 Cup (16 tbs), finley minced|
|Finely minced parsley||1 Cup (16 tbs)|
|Olive oil||1 Cup (16 tbs)|
|Red wine vinegar||2 Cup (32 tbs)|
|Garlic||1 Teaspoon, minced|
|Black pepper||1 Teaspoon|
|Anchovies||1 Teaspoon, chopped|
|Capers||1 Tablespoon, minced|
Mix the herbs i.e., the celery and parsley in a large bowl.
Add the oil, vinegar, garlic, salt, and pepper.
If one prefers a more exotic mixture, add the anchovies and/or the minced capers.
This will keep for 1 week in the refrigerator.
