Little Joe's Vinaigrette

Ingredients
  Celery 1 Cup (16 tbs), finley minced
  Finely minced parsley 1 Cup (16 tbs)
  Olive oil 1 Cup (16 tbs)
  Red wine vinegar 2 Cup (32 tbs)
  Garlic 1 Teaspoon, minced
  Salt 1 Tablespoon
  Black pepper 1 Teaspoon
  Anchovies 1 Teaspoon, chopped
  Capers 1 Tablespoon, minced
Directions

Mix the herbs i.e., the celery and parsley in a large bowl.
Add the oil, vinegar, garlic, salt, and pepper.
Whip vigorously.
If one prefers a more exotic mixture, add the anchovies and/or the minced capers.
This will keep for 1 week in the refrigerator.
