Zucchini With Basil Vinaigrette

Ingredients
  Zucchini 6 Small
  Red onion 1 Tablespoon, finely slivered
  Green pepper 1 , finely julienned
  Red pepper 1 , finely julienned
For vinaigrette
  Fresh basil/1 tablespoon dried basil 1⁄4 Cup (4 tbs), chopped
  Fresh lemon juice 1 Tablespoon
  Olive oil 3 Tablespoon
  Dijon mustard 1 Teaspoon
  Sea salt/Seasoned salt / salt-free seasoning 1⁄4 Teaspoon
  Fresh ground black pepper To Taste
Directions

GETTING READY 1) Cut the zucchini diagonally in the pieces of 1/4 inches. MAKING 2) In a steamer, place the zucchini. 3) Cover the steamer and steam the zucchini over boiling water for at least 3 minutes or until vegetable turn soft. FINALIZING 4) In a serving dish, take out the steamed zucchini. 5) In a small mixing bowl, mix all the ingredients of vinaigrette and whisk well. 6) Combine zucchini with vinaigrette and toss well ensuring not to break the pieces of zucchini. SERVING 7) Serve the zucchini with basil vinaigrette as a side dish.
