|Dijon mustard||2 Tablespoon|
|Wine vinegar||6 Tablespoon|
|Olive oil/Salad oil (or some of each)||1 Cup (16 tbs)|
Insert metal blade.
Finely chop shallot; set aside.
Place mustard and vinegar in work bowl.
With motor running, slowly pour oil through feed tube; continue processing until blended.
Return shallot to work bowl; process just to combine.
Season to taste with salt and pepper.
