Poireaux Vinaigrette

Ingredients
  Leeks 6
  Chopped capers 1 Tablespoon
For dressing
  Lemon juice 2 Tablespoon
  Olive oil 4 Tablespoon
  Caster sugar 1 Teaspoon
  Meaux mustard 1 Teaspoon
  Garlic 1 Clove (5 gm), crushed
  Chopped parsley 1 Tablespoon
  Chopped chives 1 Tablespoon
Directions

Slice the leeks very finely and arrange in a salad bowl.
Put the dressing ingredients in a screw-topped jar and shake well.
Pour over the leeks, add the capers and toss well.
Chill for 1 hour before serving.
