|Celery stalk||4 Medium|
|Unsweetened apple juice||1⁄2 Cup (8 tbs)|
|White vinegar||1⁄4 Cup (4 tbs)|
|Fresh lemon juice||1 Tablespoon|
|Lettuce cups||4 Large|
Wash and cut the celery diagonally.
Do not peel.
Pour boiling water over the celery and drain at once.
Combine apple juice, vinegar, and lemon juice; pour over the celery and marinate for 2-3 hours.
Drain and serve in lettuce cups.
