Greens With Mustard Vinaigrette

Ingredients
  Assorted salad greens 4 Cup (64 tbs) (Spinach Leaves, Escarole, Chicory Or Dandelion Greens)
  Ripe tomato 1 , peeled, chopped
  Olive oil/Oil 1⁄4 Cup (4 tbs)
  Red wine vinegar 2 Tablespoon
  Dijon mustard 1 Tablespoon
Directions

In large bowl, combine salad greens and tomato; toss lightly.
In small jar with tight-fitting lid, combine all dressing ingredients; shake well.
Pour dressing over salad mixture; toss lightly to coat.
Serve immediately.
