Greens With Mustard Vinaigrette
|Assorted salad greens||4 Cup (64 tbs) (Spinach Leaves, Escarole, Chicory Or Dandelion Greens)|
|Ripe tomato||1 , peeled, chopped|
|Olive oil/Oil||1⁄4 Cup (4 tbs)|
|Red wine vinegar||2 Tablespoon|
|Dijon mustard||1 Tablespoon|
In large bowl, combine salad greens and tomato; toss lightly.
In small jar with tight-fitting lid, combine all dressing ingredients; shake well.
Pour dressing over salad mixture; toss lightly to coat.
