Cucumber Vinaigrette

Ingredients
  Cucumber 1 Large, unpeeled, sliced
  Lemon juice 2 Ounce
  Green onions 2 , chopped
  Diced sweet red pepper 1 Tablespoon, diced
  White vinegar 1⁄4 Cup (4 tbs)
  Unsweetened apple juice 1⁄2 Cup (8 tbs)
  White pepper 1 Dash
  Dry mustard 1 Pinch
Directions

Crisp the cucumber slices by packing in crushed ice.
Drain.
Combine remaining ingredients and marinate the cucumbers for 2-3 hours.
Drain.
Serve the cucumber slices on a bed of lettuce.
No salad dressing its required.
