Vinaigrette Spinach

Ingredients
  Onion 1 Teaspoon, minced
  Butter/Margarine, fat / salad oil 6 Tablespoon
  Prepared mustard 1⁄2 Teaspoon
  Lemon juice/Vinegar 2 Tablespoon
  Salt 3⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Shelled hard cooked eggs 2 , chopped
  Cooked spinach 2 1⁄2 Pound, unseasoned, chopped (2.5 Cup)
Directions

Saute onion in 1 tablesp butter until tender.
Then add remaining ingredients, except spinach, and heat thoroughly.
Pour over spinach; toss, and serve.
