Holiday Split Peas Vinaigrette

Holiday split peas vinaigrette is a cooked peas vinaigrette. Prepared with sausage and onions along with a vinaigrette blend of oil with parsley and mustard to taste, it is finished with the addition of tomatoes. With salt and sugar to taste, this split peas vinaigrette can be served with peas of choice.
Ingredients
  Split peas 4 Cup (64 tbs), washed (Green Or Yellow)
  Water 2 Quart
  Cooked smoked sausage 3 Pound, smoked
  Onions 4 Pound, finely chopped and steamed or sauteed (12 Medium Units)
  Olive oil 2 Cup (32 tbs)
  Vinegar 3⁄4 Cup (12 tbs)
  Chopped fresh parsley 1 1⁄2 Cup (24 tbs)
  Mustard 1⁄3 Cup (5.33 tbs) (German Hot Or Coarse)
  Sugar To Taste
  Salt To Taste
  White pepper To Taste
  Tomatoes/Red bell peppers 4 Pound, coarsely chopped and sauteed
Directions

Combine split peas and water in stockpot.
Bring to a boil; reduce heat and simmer 20 minutes or until peas are tender.
Remove from heat; drain, if necessary.
Stir in sausage and onions.
Keep warm.
Blend together oil, vinegar, parsley, mustard, sugar, salt and pepper.
Pour oil mixture over split pea mixture; blend.
Gently stir in tomatoes.
