1 Bunch (100 gm)
Freshly ground black pepper
Lemon juice/1 tablespoon vinegar
Olive oil/Salad oil
1⁄4 Cup (4 tbs)
1. Trim the leeks and cut them lengthwise almost but not to the root end. Wash thoroughly, making sure all the sand is removed. Tie leeks together neatly. Drop into boiling salted water and simmer until tender, fifteen to twenty minutes. Drain and cool.
2. Mix together the mustard, salt, pepper and lemon juice. Add the oil gradually, stirring until the ingredients are well blended. Marinate the leeks in the dressing an hour or longer and serve well chilled.
