Leeks Vinaigrette

Try this version of amazingly delicious Leeks Vinaigrette recipe. An effortlessly prepared side dish recipe; the Leeks Vinaigrette is a dish that you would surely love to talk about with us!
  Leeks 1 Bunch (100 gm)
  Prepared mustard 1 Teaspoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Lemon juice/1 tablespoon vinegar 1 Teaspoon
  Olive oil/Salad oil 1⁄4 Cup (4 tbs)

1. Trim the leeks and cut them lengthwise almost but not to the root end. Wash thoroughly, making sure all the sand is removed. Tie leeks together neatly. Drop into boiling salted water and simmer until tender, fifteen to twenty minutes. Drain and cool.
2. Mix together the mustard, salt, pepper and lemon juice. Add the oil gradually, stirring until the ingredients are well blended. Marinate the leeks in the dressing an hour or longer and serve well chilled.
