The shallots in this recipe will bring a strong flavor to this vinaigrette, but it is milder than a white, yellow or red onion. To soften the flavor further, either add more honey or add some mild mustard.

Use a mezzaluna to chop the onion.
Keep the chopped onion in a large bowl. Add some honey, olive oil, mustard, red wine vinegar and some salt. Whisk.
Add a piece of mushroom, taste it and add rest of the mushroom.
