10 Minute Vichyssoise
|Potatoes||2 Cup (32 tbs), diced|
|Onion||1 Medium, chopped|
|Chicken broth||2 Cup (32 tbs)|
|Milk||2 Cup (32 tbs) (or cream)|
|Chives||1 Tablespoon, chopped|
Put potatoes, onion, and chicken broth into cooker.
Close cover and set pressure regulator in place.
When regulator is rocking gently, cook for 5 minutes.
Cool at once.
Mash the potatoes and liquid through a sieve into a large bowl.
Add salt and milk; mix well to blend all the flavors.
Garnish vichyssoise with chives when ready to serve.
