American Vichyssoise

Ingredients
  Leeks 4
  Butter/Margarine 2 Tablespoon
  White onion 1 , thinly sliced
  White celery stalks 1 , finely chopped
  Potatoes 2 Cup (32 tbs), peeled, diced
  Boiling water 4 Cup (64 tbs)
  Chicken stock cubes 4 , crumbled
  Cream 1 Cup (16 tbs)
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Chives 2 Tablespoon, chopped
Directions

MAKING
1. Slice only the white portion of the leeks thinly
2. In a two litre casserole, melt butter/margarine for half a minute, add leek and onion to it and microwave for another three minutes till
3. Add celery, stock cubes potatoes and water, cover and microwave for another ten minutes; allow to cool and puree in an electric blender
4. Return to the casserole and add cream, salt and pepper, cover and microwave for another two minutes

SERVING
5. Sprinkle with chopped chives and serve hot
