Quick Tomato Vichyssoise
|Cream of leek soup mix||2 2⁄3 Ounce (1 Package)|
|Water||2 Cup (32 tbs)|
|Ripe tomatoes||6 , peeled and chopped|
|Buttermilk||2 Cup (32 tbs)|
|Chopped fresh dill||1 Tablespoon|
Combine soup mix and water in heavy saucepan.
Bring to a boil, stirring constantly.
Add chopped tomatoes and cover tightly.
Simmer 15 minutes or until tomatoes are broken up, stirring occasionally.
Remove from heat and press soup mixture through a sieve or food mill or buzz in a blender.
Add buttermilk and salt to taste.
