Hot Or Cold Vichyssoise

|Peanut oil||1 Teaspoon|
|Onion||1 Medium, chopped|
|Water||4 Cup (64 tbs)|
|Potatoes||2 Cup (32 tbs), peeled, diced|
|Leeks||1 Cup (16 tbs), sliced|
|Sea salt||To Taste|
|Mixed herbs||To Taste|
|Fresh chives||2 Tablespoon, chopped|
|Fresh parsley||1⁄4 Cup (4 tbs), chopped|
In a saucepan, heat oil.
Saute onion a few minutes.
Add water and vegetables.
Bring to a boil.
Over low heat, simmer 30 minutes.
In a blender, puree mixture.
Season with sea salt and mixed herbs.
