Pork Pie With Sweet Potato Biscuits
|Diced roast lean pork||2 1⁄2 Cup (40 tbs)|
|Milk||1 1⁄2 Cup (24 tbs)|
|Cooked carrots||3 , diced|
|Chicken stock||1 1⁄2 Cup (24 tbs), made with bouillon cube|
|Cooked onions||6 Small|
|Chopped parsley||1 Tablespoon|
|Grated nutmeg||1⁄4 Teaspoon|
|Sweet potato biscuits||6|
Preheat oven to 350°F.
Place pork and vegetables in oblong baking dish.
In a medium saucepan melt the margarine over low heat.
Stir in the flour.
Stir in combined milk and chicken stock.
Stir constantly as it cooks over low heat for about 2 minutes.
A wire whisk is a helpful utensil for this.
Season with salt and pepper.
Pour sauce over pork and vegetables.
Top with Sweet Potato Biscuit.
Bake for 30 to 35 minutes.
