Orange Yams

The orange yams are a sweet and savory recipe made with yams and honey. Spiced with nutmeg and seasoned to taste along with orange rind for flavor, the orange yams are baked to finish and are great with both vegetables and meats.
  Yams 4 Pound
  Butter 1 Tablespoon
  Honey 1 Tablespoon
  Orange juice 2
  Grated orange rind 2
  Salt To Taste
  Pepper To Taste
  Nutmeg To Taste

Boil yams in water to cover until tender; drain.
Drop into cold water; slip off skins; mash.
Blend in remaining ingredients; spoon into buttered casserole.
Bake at 325 °F about 40 minutes, until golden.
